Hi everyone, I'm Lisa Manzo, registered holistic nutritionist, fitness trainer, owner of Pure
0:06
Energy Wellness Lofts and author of Healthy is Sexy. Welcome! We are going to make a drink with some holiday spirit
0:15
I'm so excited to show you my dairy-free, gluten-free, refined sugar-free eggnog recipe
0:21
here today. It's going to be wonderful, your family and friends are going to love it and they're going
0:25
to beg you year after year to bring this drink to your next festive Christmas holiday party
0:32
So welcome to Real Food Live
0:51
Lisa Manzo here, welcome to my kitchen where we are going to make a festive eggnog drink
0:58
So traditionally, eggnog is typically known as also egg milk punch. And I say punch because typically people add some rum to their eggnog
1:08
So although I'm not featuring rum in today's eggnog recipe, you can most definitely add
1:14
it if you care to. So let's talk a little bit about eggnog
1:18
So eggnog is typically made two ways. One with raw eggs and one with tempered, cooked egg yolks
1:28
So today we are tempering the egg yolks. I find that most people feel intimidated when they see a recipe that says it involves tempering
1:37
But I promise I'm going to show you how simple this is. I like to temper the egg yolks for safety, but a lot of people do suggest that raw egg
1:46
recipes are fine. However, you do typically add in alcohol, quite a bit of alcohol when it's raw eggs
1:53
And so there's nothing living in anything with that much amount of alcohol
1:57
But because today we are featuring a recipe without alcohol, we are going to temper the eggs
2:03
So we are going to start off with six extra large egg yolks
2:08
We're going to do a can and a half of organic, full fat coconut milk
2:14
And full fat is very, very important. It's what's going to really thicken that eggnog up and so that it's not in a liquid format
2:23
So we really want it thick. Remember how I always, always talk about not being afraid of good fats like coconut milk
2:29
So let's not worry about that. We're also going to use a cup and a half of unsweetened almond milk
2:39
And our spices here today are a cinnamon stick. We have ground cinnamon, so a quarter teaspoon of ground cinnamon
2:46
We have nutmeg, ground nutmeg, and that's a half a teaspoon. And then two teaspoons of vanilla extract, so pure organic vanilla extract
2:56
And then half a cup of maple syrup. So that's our sweetener
3:01
So I have come on over to my stove here. I have started to warm up the cup and a half of almond milk
3:08
And I've done this with the cinnamon stick here. So look at that beautiful cinnamon stick
3:12
And you can really start to smell all those beautiful Christmas smells
3:17
Like cinnamon reminds me so much of Christmas. And so you want to stir the cinnamon stick around in the almond milk until the flavors
3:28
until the smell becomes really, really fragrant. And the almond milk has been dissolved by about a third
3:37
And then what we're going to do with this almond milk is we are going to place it into
3:43
the egg yolks. So I'm going to bring you back over to my egg yolks. I'm going to just lower this for a little bit
3:49
And so what we're going to do here is take these eggs and start separating them
3:54
So with the egg whites, make sure you put them in the fridge
3:58
You can make an egg white omelette. You can even add the egg whites to some of your baked goods
4:03
So you don't want to get rid of that. So you're just going to crack it
4:08
And we're just going to separate here the yolk from the egg whites
4:13
There we go. And we're going to place the yolk into our bowl
4:18
So like I said, it's six extra large egg yolks. So guys, if you have any questions or any comments or you have a favorite eggnog recipe
4:30
that you'd love to share with us, please send in your comments, your questions, any of your recipes
4:38
I'd love to hear from them. I have you live here with me, which means I can answer any of your questions and just
4:43
interact with you. I'm not alone here. So send them on in
4:49
There we go. So separate these. And so you're going to use this bowl with your egg yolks to start tempering
5:04
There we go. So nice and quick process here. There we go
5:14
I absolutely love Christmas time. It is one of my favorite times of the year because it's just such a happy, happy time
5:24
When I think of Christmas, I automatically immediately think of eggnog. For years, I've had to stop drinking eggnog, which has been pretty sad because of my dairy intolerance
5:35
But once I created this recipe, I was super excited because it tastes identical to the
5:40
store bought eggnog that I can't drink. And most of my family and friends don't even notice the difference
5:47
So they tend to ask me when I'm going to be bringing my eggnog to our family Christmas party
5:53
So I'm really, really excited about that. And I hope you guys will be too once you see how easy this is and see how easy it is to make
6:01
So you're going to whisk together the egg yolks and the maple syrup
6:04
So I'm using, of course, pure maple syrup here. And once that becomes thick, we're going to set this bowl aside and see how my almond
6:14
milk is doing on the stove. So that almond milk takes about 10 to 12 minutes to dissolve there
6:25
Dissolve by about one third. And then we're going to use that to temper this mixture here
6:30
So once that's thickened, I'm going to bring over the almond milk for you here
6:37
So you're going to discard the cinnamon stick. So there we go
6:45
And then what we want to do is we're slowly adding the almond milk to the egg yolk and
6:51
it's done very slowly so that the egg doesn't cook. Okay, so that's what we don't want
6:56
So you're going to constantly whisk while you're slowly adding in this almond milk into
7:05
the egg yolks. So you can really smell that cinnamon. So just by cooking the almond milk and the cinnamon for about 12 minutes, that almond
7:17
milk has turned into a flavorful cinnamon flavor. So what's great about making your own eggnog is that you can change up the flavors, which
7:26
is fantastic. So you can use an orange peel, you can use cinnamon like I did today, you can use vanilla
7:33
any of your spices, which will change the flavor of the eggnog and will add a natural flavor
7:39
You might be watching this and thinking, why would I make my own eggnog when I can just
7:44
go to a nearby grocery store and buy a festive carton off the shelf
7:49
So we talk a lot about additives and preservatives that are in store-bought products and so we
7:56
want to be mindful of that, especially when a recipe like this is so easy to make and
8:01
it really doesn't take a lot of time. So store-bought eggnogs do have a lot of thickeners, stabilizers and emulsifiers inside
8:09
the product. And so we, by making it on our own, we're thickening it naturally with our coconut milk
8:16
we're sweetening it naturally with all of our spices and our cinnamon and our maple syrup
8:21
So it is definitely better off to make it if you can
8:26
So there are companies out there like Oh So Delicious, which does create a festive holiday
8:32
eggnog and they do come out with it every Christmas. So it's nice to see that and it's coconut-based
8:38
So let's see if anybody has any questions here for me. Any questions
8:47
Alright. No questions. Okay, so I'm going to slowly continue doing this
8:57
This is probably one of the most important parts here, because like I said we want to
9:02
do it nice and slowly so that that egg doesn't cook. So as you can see, it's getting thicker and thicker, which is wonderful
9:13
Slowly slowly. And you want to maintain that constant whisk here as well
9:19
So I want to talk a little bit about almond milks, because here I have featured the Silk
9:26
Unsweetened Original Almond Milk. And the reason I choose to use Silk is because it is one of the brands that does not contain
9:35
an ingredient called carrageenan. So carrageenan, that funny hard to pronounce word, is found actually in most organic or
9:45
natural food products, even in the health food store. And it's something that I want you guys to be aware of
9:52
Carrageenan is a ingredient that they use to help stabilize and thicken products
9:58
So you'll find it a lot in say a coconut milk or an almond milk
10:03
Silk is the brand that does not include that. And carrageenan has been found to contribute to digestive issues, and also because it's
10:13
not digestible, but also could over time create ulcers as well. It also creates this immune response, causing immune dysfunction
10:23
So lowering the immune system, which we don't want. So it's definitely an ingredient that we want to start looking out for in all of our products
10:33
Alright, so just going to finish tempering this here. And we're almost there
10:40
So this is the only kind of patient part of the recipe that you really need to be, otherwise
10:45
everything else that you know that I like to do is throw everything in together
10:49
So we're going to slowly temper that. We're almost there. And then once this is done, you're going to throw this mixture here in the bowl back into
11:01
this sauce pan on medium heat. Okay, so we're going to throw this back in on medium heat
11:11
And we're going to add in our coconut milk here as well
11:16
So like I said, about a can and a half of the coconut milk
11:19
Okay, so before I start here, wanted to read some of these comments
11:25
Does the almond milk have carrageenan additive in it? Amazing! I'm so happy you asked that and happy I answered
11:31
We're on, we're in alignment. So we completely read each other's mind. So I'm happy I answered that for you
11:35
If you have any other questions, please reach out about that. I have an almond allergy
11:40
Have you tried with cashew milk? Yes, Kristen, cashew milk is also wonderful because it's got that creaminess to it and
11:47
it's got that fat. So definitely you can use an unsweetened cashew milk
11:51
Just make sure you read the back and there's no carrageenan in it. Wonderful
11:56
And then Cecilia has here, I make a recipe and use cornstarch to replace about two eggs
12:04
So that's great because cornstarch is really meant for thickening. You could also use arrowroot as well
12:10
That's also used as a thickener. Some people have an allergy or intolerance to cornstarch, believe it or not
12:16
So some people can't use that, but it's definitely something that can help thicken it
12:21
Thank you for sharing. You go girl, CX, you go too. So I'm going to add in our coconut milk here into our tempered eggs
12:32
So just throwing that in. So like I said, it's about a can and a half of full fat coconut milk
12:40
We want that beautiful fat in there. It's going to help thicken this mixture up
12:46
So one and a half cans. So now we're going to put this back onto the stove on medium heat and we're going to constantly
12:57
stir it because we don't want it to come to a rolling boil because we don't want the eggs
13:02
to curdle. So we definitely want it to bubble, but not boil
13:06
So we're going to throw this back onto the stove on medium heat
13:10
So please send in your questions and comments because this would be the perfect time for
13:14
me to respond since I kind of have to stay here by the stove and stir this out
13:20
So coconut milk is going to melt into the mixture and we want it to combine so that
13:25
it's nice and thick. Okay, so we want a thick eggnog. Once we're done this process, we are going to take it off the stove
13:33
We're going to add in all of our flavors. So today, like I mentioned, we have two tablespoons of pure vanilla organic extract
13:41
We have a quarter teaspoon of cinnamon and half a teaspoon of ground nutmeg
13:47
So that's what we're flavoring it with today. And we are going to put it in a bottle and put it in the fridge to chill
13:52
So you want to chill it before serving. And also when you are adding it, you know, when you're actually ready to drink it, you
14:00
can pour it into a really nice cup or mug and then add or sprinkle in some cinnamon
14:06
on the top too. I love cinnamon, so I put cinnamon on absolutely everything I can
14:12
That's sweet, of course. So I'm going to just watch this nice and slowly so that it doesn't curdle. Wonderful
14:23
So I'll keep coming back and forth to make sure I'm watching this and make sure it doesn't
14:29
boil too much. So I wanted to talk to you a little bit about the holidays
14:34
So the holidays come around and I instantly notice people getting very overwhelmed and
14:40
very stressed, that word stress that we tend to overly use. So there are some little tips and tricks that you could use for the holidays that could
14:49
bring your stress level down and really enjoy the Christmas time. So it's not about the hustle and bustle and running to the mall to get gifts and it's
14:58
really about spending time with family, tuning in to how grateful you are for all the blessings
15:04
that you have in your life and really honing in to the amazing feeling that Christmas gives you
15:11
So the blessings, the joy, the gratefulness, the love. So really focusing on those and by focusing on those wonderful feelings, those are the
15:19
feelings that are going to reduce the stress of thinking about everything else
15:23
So I want you to focus on deep breaths. So taking three deep breaths every single day, multiple times throughout the day will
15:31
actually lower stress levels, will actually lower blood pressure levels. So believe it or not, breathing, it's free and it's effective
15:40
So breathing through your nose, holding for three counts and then exhaling out diaphragm
15:47
breaths for three and doing that three times will actually lower your stress levels and
15:52
it actually helps with anxiety as well. So just bring it back to the stove here
15:57
So we talk a lot about how although Christmas is such a joyous time and people are enjoying
16:03
the feeling of Christmas, we're not really focusing on what Christmas is all about and
16:07
it's about appreciation and it's about giving. So when we're thinking about gifts, we're just giving and the feeling of giving feels good
16:15
So really focusing on the present moment and how wonderful that feels as well
16:22
So really wanted to tune into that restorative yoga for anybody who is really thinking about
16:29
doing something for themselves this holiday season. Restorative yoga would be something great to do
16:35
It really works on the parasympathetic nervous system which most of us tend to exhaust because
16:40
we're always on the go and our adrenals are always fatigued. So working on the parasympathetic nervous system and handing over our keys from the
16:48
nervous system to the parasympathetic nervous system for just an hour a couple times a
16:52
week will definitely release and decrease stress levels. So those are my holiday tips on decreasing stress
17:01
I hope some of you can try some of those techniques. I find the breathing technique really works for me in the car
17:10
That's what I really find I need it the most. So as you can tell, the mixture is starting to get thicker
17:17
So again, you want it to bubble but you don't want it to overly bubble
17:21
You don't want it to boil. You do want to make sure that you're paying attention to this
17:26
I find this is the hardest part. So if my daughter is running around smelling this wonderful drink and wanting a little
17:32
bit of it, I have to really focus my attention here and not on her
17:36
So you have to be careful that you don't leave it and forget about it because it's very easily done
17:41
All right, so let's see if you guys have any questions for me
17:47
Hi, Michelle says hi. Hi Michelle. And Sue says interesting. It is interesting
17:54
So it's interesting how we can actually create an eggnog that is traditionally cream based
18:01
and dairy based into no dairy, no gluten, no refined sugars. So when I say it's healthier for you, remember everything in moderation
18:12
So this still is a fun little treat for the holidays, but we don't want to overindulge
18:17
Okay, because it is still there are still sugars in here. So we want to make sure that we're having it in moderation
18:24
But it's definitely a healthier option than your traditional eggnog or than your store
18:29
bought even if it does say natural organic. Okay, we don't want to be fooled by those words
18:35
So for the sake of television, that's why television is so magical
18:40
I have created an eggnog that I did earlier today, earlier this morning
18:46
And I placed it already in the fridge. So I'm going to pull that out for you guys to see
18:50
So that has already been boiled. It's already thickened and I've chilled it in the fridge and I've put it in a really
18:55
nice bottle. So I'll show you that over here. Great. So this here is my chilled eggnog
19:06
So as you can see, it's nice and thick. I'm going to grab, I'm going to grab a mug and show you how good it is
19:15
Of course, I want to grab a pretty mug, a pretty festive fall slash Christmas mug
19:24
And so obviously I did take this out of the fridge. So you want to warm it up for it to taste really, really nice
19:31
But I'm going to pour it into my cup and you'll see how thick it is. Perfect
19:39
And I'm going to go ahead and sprinkle some of this cinnamon on top
19:46
And then you can even add a little cinnamon stick to the top of it
19:51
So as you can see, it's nice and thick that it's holding up the cinnamon somewhat
19:56
Don't fall on me. So this eggnog is so, so flavorful. It smells incredible
20:03
I just want to make sure this doesn't curdle on me here
20:08
It smells incredible and your family and friends are going to absolutely love it
20:12
And they're not even going to know that it's dairy free or gluten free or fine sugar free
20:16
because it just smells and tastes delicious. Okay, so once this is done, you're going to add in all of your spices
20:26
So I'm going to bring this over here. So I'm going to add in the vanilla
20:34
I'm going to add in the nutmeg. And I'm going to add in the cinnamon
20:39
And I'm just going to stir that here. That's it
20:51
Once this is done, I'm going to grab a glass jar and put it in, bottle it, put it in the
20:55
fridge and chill it. So how easy was that, guys? So tempering eggs is not as intimidating as it appears
21:05
Okay, and at least your egg yolks are cooked and you don't have to worry about any salmonella
21:10
or anything like that because we, especially if you're not putting alcohol in it
21:15
And so that's it, guys. Easy eggnog, right, you know, right in your homemade, in your kitchen
21:23
Super, super easy. Just check one more time, see if anybody has any comments
21:28
So guys, if you have any comments or questions, please send them in. I'll be answering throughout the day, throughout the week
21:35
I'll be continuing to answer any questions you have, commenting. If you want to make this eggnog and tag us on Instagram, tag at the hearty soul, tag

21:51
I haven't even thought of. So thank you so much for tuning in today as we make our holiday drink
