Hi everyone, I'm Lisa Manzo, registered holistic nutritionist, fitness trainer
0:05
owner of Pure Energy Wellness Lofts, and author of the book Healthy is Sexy. I am
0:09
so excited to share with you this simple four ingredient chocolate maca truffle
0:17
It is decadent, it is so creamy, but we are using no cream. I'm so excited to
0:23
share this with you, especially in this weather that has us feeling gloomy. This
0:27
chocolate recipe is gonna lift and boost those moods, so join me for this
0:32
simple, simple recipe right next. Welcome to Real Food Live! Hi everyone, Lisa Manzo here making some dark chocolate maca truffles. So you
0:58
might wonder, wow this sounds decadent, this sounds like it's filled with all
1:02
the things that I typically don't consume in my diet, meaning dairy
1:07
additives, preservatives, all that stuff, but I've made it free of all of that. So
1:13
today I'm going to show you how to make it. It's very simple and I keep
1:17
reiterating simple because in most of my shows I do try to show you that recipes
1:21
can be simple yet delicious, and you can make them in advance, put them in the
1:27
fridge, and then you're good to go. So that's what it's all about, is really
1:32
using our time most effectively. So right now I have some dairy-free
1:38
nut-free, soy-free, free of everything chocolate chips, and the brand that I
1:44
really, really like is Enjoy Life, and they have a great product on the market
1:50
called Mega Chunks which melts really, really quickly as opposed to the
1:54
chocolate chips. They do also have chocolate chips that you could add into banana bread recipes and muffins and stuff of that sort, but I decided to use
2:01
the Mega Chunks only because I will be melting this on the stove, and it's a
2:06
very, very quick. And I really like this product because like I mentioned, it's
2:10
really free of all of the common allergens, so the dairy, the nuts, the soy
2:16
so everybody can enjoy it in your household, not only making them but
2:20
eating them as well. So you'll just have to fight over who licks the bowl first. I
2:25
also have with me my avocado, so I'm using one Hass ripe avocado that I'll
2:31
be mashing. You can definitely do this recipe in a food processor or you know a
2:38
high-speed blender, but today I'm gonna just leave all those gadgets out and I'm
2:42
actually going to use a very simple potato masher and my knife, and we're
2:48
gonna do it this way. So avocado is the base, so typically with chocolate
2:54
truffles, heavy cream is the base of them, and that's where you're getting that
2:59
nice heavy dense truffle and it's decadent. But I promise you these
3:06
truffles are as decadent and as dense just using heart-healthy avocado, okay
3:12
And then to coat these these beautiful decadent truffles, I'm using maca. So
3:19
please remember that you can spice up these truffles and any recipe that we
3:24
show you here to add your own individual flair. So you can also add or
3:29
roll the truffles in cacao powder, you can roll them in shredded coconut or
3:34
nuts if you're not, if you don't have a nut allergy, or chia seeds, flax seeds
3:38
anything of that sort. I decided to use maca and I'll tell you a little
3:43
why later. I've also decided to use Himalayan sea salt, so although I'll roll
3:49
some of them in the maca powder, I'll also leave some of them with just the
3:54
chocolate and sprinkle that Himalayan sea salt for all its amazing mineral
3:58
benefits. And I'll also be adding some sea salt, just regular sea salt, into the
4:03
truffle mixture. So let's get started, so excited here. So I'm gonna grab my bowl
4:08
and the first thing I'm going to do is cut my avocado. So opening up that
4:15
avocado, so we all know the incredible health benefits of avocado, we've talked
4:21
a lot about its healthy fats and that avocados are great to add into the diet
4:26
not only for your hair and your skin, which definitely is a huge benefit for
4:31
you women out there, but also because of its essential fatty acids and how really
4:37
great it is for our heart and our health in general. So I'm going to just scoop out
4:42
so I've basically cut the avocado into smaller pieces so that I can easily take
4:47
it out and then it's a lot easier to mash as well. So guys, while I'm making
4:52
these truffles, please please please send me your comments. I have my computer here
4:57
I am ready to multitask and answer any questions that you have. If you just want
5:02
to shout out and give me a shout out that you're here so I don't feel so
5:06
lonely on the camera, I'm okay with that too. So taking out the pit, I find it
5:12
easier to just take my knife, stab that pit and twist it out. So as you can tell
5:20
it's quite easy to make these truffles without a blender or food
5:24
processor, but if you really don't want to get your hands dirty you can most
5:28
definitely use one. So I really also like to make this with my daughter
5:35
because when it gets to the rolling part, she loves to get her hands in there and
5:39
roll balls, it's actually quite fun for her. So I'm just gonna take the potato
5:43
masher and I am going to mash the avocado. You really want to get it to a
5:49
point where it's nice and smooth so there's no clumps, no lumps in it, which
5:55
could require some muscle. Okay so I'm gonna continue that and in the meantime
6:01
I'm gonna take my dark chocolate chips, mega chunk chips, about 3 quarters of a
6:07
cup, I'm gonna place it into a bowl. You can melt this, you know I'm not a huge
6:13
fan of microwaves, but if you do have a microwave and you are lacking in time, you can melt the chocolate in the microwave for about 20 seconds, stir it
6:24
put it back in for another 15 seconds, again until it's nice and smooth. I'm
6:29
actually going to put it on my stove here. So I'm very lucky in the fact that
6:37
GE electric stoves or gas stoves, sorry, have a function where I can melt
6:43
chocolate directly on the heat with a metal bowl and that is a savior for me
6:48
So I'm gonna melt this with my spoon here, I'm just gonna turn it around. So
6:53
for those of you who have started to get to know me now here on the show, you
6:58
really know how much I love, love, love chocolate. I have a love affair with
7:03
chocolate and there's so many reasons why. Chocolate is filled with emotional
7:10
boosting properties and in the weather that we're having here in Toronto, it's
7:15
quite gloomy, we haven't seen the Sun in a few days and so it's, it's to the point
7:21
where we need a little bit of a boost and chocolate gives you that. Chocolate
7:25
is actually one of the staples in my house, I always have it in the fridge for
7:29
whenever I need a little boost or a little sweet treat, I know that I'm getting something healthy and I'm very much about no preservatives and no
7:38
additives and no MSG, so making something like this you can feel comfortable that
7:44
you, you know, you're getting a healthy treat and you're not sacrificing your
7:47
health. So we're gonna head over back to the avocado mixture and I'm gonna make
7:52
sure it's mashed even more so and don't be afraid if you get a little bit of
7:59
that avocado skin in there, that's where you need the kids to point out those
8:03
little, little things. So I'm just gonna check some of the comments here, again if
8:09
you have any comments please send them in, have you made this before, have you made it in a different way? Good morning Sherry, so I'm hoping that you're as
8:18
excited as I am about this in this awesome truffle recipe. I know
8:24
Valentine's Day is kind of a little further out, it's in about a month or so
8:28
but I always like to plan ahead of, ahead of time and I really like making these
8:34
truffles in advance and keeping them in the fridge so that once Valentine's Day
8:39
hits, me and my hubby can enjoy them with a little glass of Prosecco of course
8:46
Okay, so as you can see my avocado mixture is nice and smooth, so very
8:54
little clumps here, very, very easy. Who out there loves avocado as much as I do
9:02
I can eat avocado in any which way, whether it's guacamole, whether it's just
9:07
on a wrap, on its own, in a chocolate pudding. This recipe is very similar also
9:12
to my chocolate pudding recipe except I add a sweetener, maple syrup or honey to
9:17
that and that's a huge hit in this house as well. So really avocado could be used
9:24
for so many things. So as you can tell it's nice and creamy, nice and smooth
9:29
Let's go check our chocolate and see if that's ready to be mixed in with the avocado. Almost there, wonderful. So that's almost ready. Oh so tempted to
9:44
lick my fingers but I won't. I'm gonna just put a pinch of sea salt into this
9:49
avocado mixture here. Great. So send me some comments, where are you, where are you
9:59
watching me from? Is it cold there? Are you feeling like you need an energy
10:04
boost or a mood boost? Because I know I do. I need to see the sun so this
10:11
chocolate recipe is gonna help me in the meantime. Alright so we're almost done
10:20
with that chocolate. I'm gonna put it a little bit higher just because I can
10:24
with this stove. Grabbing my gloves so I don't burn myself here. So like I
10:33
mentioned I am going to coat the chocolate truffles in maca and some
10:39
people may or may not have ever heard of maca but maca is a root and it's
10:45
converted into a powder and there are so many health benefits to maca. I adore it
10:50
Being a female it helps boost our hormones, it helps with fertility, with
10:56
energy but for men, men should really start incorporating this powder into
11:02
their smoothies, into their cereals because it is an aphrodisiac. So just
11:07
something to think about. It's a great powder. It also is filled with so
11:12
many minerals such as calcium and zinc and phosphorus and magnesium and
11:18
potassium as well as sterols and lipids and fiber, carbohydrates, protein, must I
11:25
go on, essential fatty acids. So all the great things that we do lack in
11:29
our diet and that we do need to get from food. So something to think about to
11:35
start adding in. It's got a great taste and it's just different, something
11:40
different to start adding and I think my chocolates done. So we're gonna bring the
11:46
chocolate over to the avocado and I am going to pour the chocolate into this
11:53
mixture. I love the color combination here with the chocolate and that vibrant
11:59
green avocado. So remember guys we really eat with our eyes and seducing our eyes
12:07
is so important, seducing our eyes with healthy healthy foods. So I want to
12:12
talk a little bit about eating healthier and how you can start changing
12:17
your taste buds to crave more of those healthy foods. So as you start eating a
12:23
healthier diet and ridding your diet of you know preservatives and additives, MSG, all that kind of stuff, your body starts to crave more of the
12:34
healthier foods which is amazing. Our bodies are incredible in that way and so
12:38
when you start eating foods that have less refined sugar, when you do decide to
12:46
have something with a lot of sugar that you do not normally do and you've
12:49
eliminated it from your diet, it doesn't taste like it used to and that's
12:54
important to note that it doesn't taste good and it might give you some side
12:59
effects. You know it could give you headaches, there's side effects that
13:03
could happen because your body has eliminated those toxins already and so
13:09
that's the key is that we want to start eliminating our bodies of those toxins
13:14
and start introducing more real ingredients and more real food into our
13:18
diet. So why don't you send me some comments, let me know if you've had this
13:24
experience, if you've started eliminating specific foods into from your diet and that those foods that used to be yummy don't really taste yummy
13:33
anymore. It's actually quite fascinating. So I am going to mix the chocolate and
13:41
the avocado so that it's fully blended and you no longer see the avocado
13:45
anymore. So that requires just a little bit more mixing here. Once this is done
13:54
you're gonna place this mixture into the fridge. You want to make sure it's in the
13:58
fridge for at least 40 minutes so that that mixture can harden, harden enough
14:04
that we can roll it into balls. Okay, all right so perfect, perfect, great. So I'm
14:20
gonna wrap this with clear wrap and then I'll place it into the fridge. In the
14:26
meantime, oh we have so many comments, I'm so excited. I love your nail varnish
14:31
Thanks Elizabeth. That's actually funny that you commented on that because my
14:36
2018 New Year's resolution was to take care of myself more, so more self-care
14:43
and when I thought about what that would mean to me and what would make me feel
14:46
good and pretty was doing my nails. So I decided to book myself into the nail
14:51
salon, a local nail salon so a small business owner because I love to
14:56
represent small businesses, and book myself into a nail salon once a month. So
15:01
I appreciate you commenting on that because I adore them too. Thank you
15:06
Both the avocados and chocolate have the same amino acids that are great mood
15:10
boosters. Joan you're so right. So together it is a powerful, powerful
15:15
combination. This sounds delicious. So excellent, I am, so Meredith says that her
15:21
family loves dark chocolate and we always have several bars of 72% chocolate
15:25
in the fridge. You're watching from Boca in Florida, oh my gosh it's
15:29
probably so much warmer in there, but yes I always have dark chocolate in my
15:33
fridge too and we want to make sure it's at least higher than 70% and it's real
15:37
cacao and raw it's even better. So I'm gonna place this mixture into the fridge
15:41
and I do have a mixture that has been in the fridge for overnight so I'll take
15:46
that out. So my mixture here that's been in the fridge, I actually did it
15:53
overnight which I prefer because the chocolate is even harder but if you
15:58
don't have time that 40 minutes is totally enough. Watching from North
16:04
Cyprus, wow. So Wendy says wouldn't the heat cause the avocado to oxidize? Wendy
16:12
no, so when we're heating the chocolate it's not heated at a very high
16:16
temperature, it's just a very very low low low simmer, so it's just warming the
16:21
chocolate enough to melt but it's by no means hot when you're when you're adding
16:25
it in, but great question. So here is the mixture as you can see it's a lot harder
16:31
than what I just put in the fridge and I'm gonna use a cute little container to
16:38
display my truffles. So about one tablespoon of the mixture into your
16:45
hands and you are gonna roll them into a ball. So I'm gonna coat some of them with
16:51
the maca powder and I'm going to not coat some of them just to add in some
16:55
Himalayan sea salt just to make it them look a little bit different. So these
17:01
truffles make about depending on how large you're making them about eight to
17:05
ten so that's how many they will yield and they store really really well in the
17:09
fridge. I want to say up to five days but I really don't think they'll last that
17:15
long in your fridge. So once you're rolling them this is a great great
17:21
activity to do with your kids depending on their age of course. My daughter at
17:26
this age kind of just shoves them in her mouth and rolls them but not so much
17:31
like balls but that's okay it's part of the fun right. So keep sending in your
17:37
questions and another person's watching us from Florida. Oh my gosh it's so warm
17:43
there I love Florida. Hi from Florida, hi from South Africa just joined. Great so
17:50
I've rolled some of these here and I'm just gonna roll enough to fill this dish
17:55
and then we're going to take our maca powder you want to get a shallow dish
18:00
add in some of your maca powder on the shallow dish and then gently roll your
18:04
balls inside of it so that we can coat it and it's nice to do you know a
18:11
nice coat on it kind of helps keep the truffle together too. Okay you know I'm
18:18
gonna have to wash my hands before I coat them. Okay perfect so let me just
18:24
head over to the sink I'm just gonna wash my hands here. Great I'm gonna grab
18:36
a shallow bowl or somewhat shallow and I'm going to put my maca powder. So I
18:43
shared with you my 2018 goals and when I say goals it's really just things I want
18:49
to aim for. Why don't you share some of yours with me? I'd like to know what
18:54
everybody else is working on and remember goals are important, something to work towards but you have to think really hard about what it is that you
19:05
need for your life. I know 2018 is very big on self-care and self-love that's
19:10
what I've noticed but it could be different for you and I definitely
19:15
love learning off other people. So as you can tell I'm coating the truffles here
19:20
in the maca powder. Don't these look fantastic? I'm so excited, so excited, so
19:27
excited to eat them. I promised my daughter that I would save her a couple
19:31
and she definitely reminded me this morning before nursery school so she
19:37
doesn't forget anything, she has a great memory. Gotta be careful what you say
19:42
sometimes. So like I said you can coat some with maca powder, shredded coconuts
19:47
cacao, nuts, chia seeds, I can grab some of this Himalayan sea salt and I'm going
19:53
to put it on some of the the balls instead of coating them. So Himalayan sea
19:58
salt is fantastic, great sodium mineral. This sea salt here I decided to use is
20:03
coarse just for the the truffle recipe so it looked pretty. So please send me
20:10
some of your other questions, I'd love to answer anything. Have you guys ever made
20:15
truffles before? What have you used in say in replace of a heavy cream? Morning
20:20
Avocado Colorado, amazing, just joined. Thank you guys so much for joining us. So
20:25
here are our truffles, dark chocolate maca truffles, no heavy cream, no refined
20:33
sugars, four ingredients, avocado, you know your dark chocolate, little bit of sea
20:40
salt and our maca powder that we're just coating the truffles with. So they're
20:46
super tasty and they're really really decadent and that's really important because when they're very decadent you're less likely to overindulge because
20:55
remember overindulging in healthy foods is also something we want to steer away
20:59
from. It's all about balance and we're trying to find that balance all day every day, believe me I try to find it all the time. But with these balls you
21:08
won't be able to eat more than two because they are so decadent which is great. You have a couple, it's your sweet tooth, it'll satiate that and you're good
21:16
So I'm just gonna try these because I can't, they're in my face, I'm smelling it
21:20
they smell amazing. So you get that decadentness and the creaminess from the
21:28
avocado but it's that big hint of chocolate, very very good. So Valentine's
21:36
Day is coming up, this is something you can make in advance, store in the fridge
21:40
and you're good to go or for company or for yourself because we're talking about
21:44
self-care here. So make these for you, draw up some salt bath, a nice chamomile
21:50
tea and this should be your Friday night evening in this cold weather. But
21:54
if you're in Florida who knows what you're doing, probably something a lot more exotic. So thank you guys for joining us on Real Food Live, we're so
22:01
happy to have you and we will see you again! you
