All right, in my food processor, I will be making super food matcha chocolate truffles

I can't wait for you to see how easy it is. Let's get started

First off, I have some walnuts that I toasted. Just toasted them, let them cool, going in

And I have beautiful, beautiful medjool dates. These are my favorite dates to use

They happen to be a little bit more expensive than other varieties of dates though, but

I like them because they're super moist and caramel-y and just filled with flavor

Now, these are very, very moist, so they don't need to be soaked

They're going to blend really easily. However, if you are buying other varieties and you feel like the dates are a little bit

dry, just cover them with water in a bowl and let them soak for 10 minutes, drain them

and then put them in. Oh yeah, and you can take off these little, like, fibrous bits at the end

We don't need those. So lid goes on. I'm just going to pulse this and blend it until it's ground down. Beautiful

As you can see, there's little tiny granules. It's ground down really, really nicely, and that's just going to help it all get going together

Next up, I'm going to add the rest of the ingredients for the truffles. So I'm going to start with some lovely raw cacao powder

This is different than regular cocoa powder because it hasn't been heated in the same way

So it's less refined, less heated, and cacao powder is really rich in iron and magnesium

and so many other wonderful minerals. And so it's our chocolate. It's what's going to make these truffles taste like chocolate

And then I'm going to add some raw coconut oil, which will...this will give them a nice

glossy sheen, and it will help keep them nice and smooth and help to bind everything

And also it's adding a healthy dose of fats. Some cinnamon powder

I love the smell of cinnamon. And then vanilla extract. Pure vanilla extract is my favorite kind

It's the highest quality, and it's just going to help to balance out the flavors, add a

nice vanilla aroma. And then once again to balance out flavors, I have some sea salt

Just a pinch going in. That's it. The lid goes back on, and I'm going to blend these until a dough, a ball of dough forms

You'll see what I'm talking about. I'm going to take the lid off

All right. I have...it's like almost turned into a complete ball of dough

Just like this. I'm just going to get some of that cocoa powder in from the bottom

Sometimes that happens when you're working with powders and you're blending. I'm going to get rid of this food processor

Put it here. So I have my ball of beautiful truffle dough

It's a little bit oily from the coconut oil, but that's good because I'm working with my hands and that means it's not going to stick too much

Now all I'm going to do is I'm going to roll this into little balls and then toss those

balls in some matcha. So I'm going to roll it just like this

They're about half a tablespoon in size. Beautiful little truffle-sized balls. Then I'm going to dip that into a bowl of matcha powder like this and I'm going to pick

it up and shake it around. So I'm tossing it in the matcha powder and look at that

In about one second flat, just tap off the excess. We have a beautiful, minus my fingerprints on the side, matcha-covered chocolate truffle

Dropping it into the bowl, tossing it around. So gorgeous. And that goes on the plate. Nice
